CANNAVIST’s Healthy Omelette

Some days you spend all evening dreaming about that tasty, hearty breakfast. Rushing to get to bed and sleep so you can wake up and crack into the best meal of the day. Omelettes are a perfect way to start the day, end the day or just if you would like a mid-day boost.

Omelettes are the ideal food for those in a rush, those looking for something different to the standard, or those who just love eggs. This 10-minute recipe gives you the chance to eat a nutritious meal and be on the go within the hour.

The earliest omelettes are believed to have originated in ancient Persia, and now most countries have their own version of this breakfast and brunch classic. We decided to use the French method for our delicious healthy omelette.  

Eggs are also incredibly filling and rank highly on the satiety index, which measures the ability of foods to make you feel full. This can also reduce later calorie intake as you are less likely to reach for that mid-morning or afternoon snack.

Eggs are one of the most nutritious foods available. A large boiled egg contains vitamins A, B5, B12, B2, B6, D, E, K, folate, phosphorus, selenium, calcium and zinc. They contain a little bit of almost every nutrient you need, making them pretty much the perfect food. Making a healthy omelette adds a range of benefits to your body with every bite.

Ingredients

  • 1 tsp rapeseed oil
  • 3 tomatoes
  • 4 large eggs
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil

Method

  1. Take a small non-stick frying pan and heat your oil over a high heat. Cut your tomatoes in half, add them to the pan and cook them cut side down until they start to soften and colour. Add the eggs, herbs and black pepper to a small bowl and beat the eggs.
  2. Remove the tomatoes from the pan and place them on your two serving plates. Pour the egg mixture into the pan and stir gently so that the egg sets on the base of the pan. Keep stirring the eggs until they are nearly cooked. Then stop stirring to allow the omelette to set.
  3. Remove the omelette from the pan and divide into quarters. Place the quarters on the two plates. Serve with the tomatoes and enjoy.
